With the busy Chol Hamoed days, having a filling, protein-packed breakfast ready for your kids makes all the difference. Here’s a simple, delicious pancake recipe that’s perfect for Passover and keeps everyone energized.

Ingredients:

  • 1 ½ cups almond flour
  • 1 cup cottage cheese
  • 4 eggs
  • 2 tablespoons oil
  • 2 tablespoons sugar
  • 1 teaspoon vanilla extract
  • 2 teaspoons baking powder (kosher for passover brand)
  • 1 teaspoon salt

Instructions:

  1. Add all ingredients into a blender and blend until the batter is completely smooth.
  2. Heat a skillet or griddle to 350°F (medium heat) and lightly grease with butter once hot.
  3. Pour ¼ cup of batter for each pancake onto the pan.
  4. Cook for about 2 minutes, or until bubbles form and begin to pop on the surface.
  5. Flip and cook for another 1–2 minutes, until golden and cooked through.

Serve warm with fruit, syrup, or a dusting of powdered sugar. These pancakes are soft, satisfying, and packed with protein—perfect for a full day of Chol Hamoed fun.
