Ingredients:
- 1 ½ cups almond flour
- 1 cup cottage cheese
- 4 eggs
- 2 tablespoons oil
- 2 tablespoons sugar
- 1 teaspoon vanilla extract
- 2 teaspoons baking powder (kosher for passover brand)
- 1 teaspoon salt

Instructions:
- Add all ingredients into a blender and blend until the batter is completely smooth.
- Heat a skillet or griddle to 350°F (medium heat) and lightly grease with butter once hot.
- Pour ¼ cup of batter for each pancake onto the pan.
- Cook for about 2 minutes, or until bubbles form and begin to pop on the surface.
- Flip and cook for another 1–2 minutes, until golden and cooked through.
Serve warm with fruit, syrup, or a dusting of powdered sugar. These pancakes are soft, satisfying, and packed with protein—perfect for a full day of Chol Hamoed fun.
