Beef Stir Fry Recipe with 3 Ingredient Sauce

4 Servings

INGREDIENTS:

  • 1 lb top sirloin steak, thinly sliced
  • Salt and Pepper to taste
  • 1 medium yellow zucchini, sliced on the diagonal
  • 1 medium onion, sliced
  • 1 red bell pepper, sliced
  • 1/2 lb mushrooms, thin sliced
  • 1 tsp grated ginger
  • 1 garlic clove, minced or pressed
  • 1/2 Tbsp sesame seeds, for garnish
  • 3 Tbsp Oil to Saute, (extra light olive oil, avocado oil, canola)

Ingredients for Asian BBQ Sauce:

  • 3 Tbsp original BBQ sauce 
  • 3 Tbsp Maple Syrup
  • 2 Tbsp low sodium soy sauce

INSTRUCTIONS:

  • Stir together 3 sauce ingredients and set aside.
  • Heat a large heavy pan or wok over high heat and add 1 Tbsp oil. When oil is hot, add beef in a single layer and sautee undisturbed 2-3 mins. Stir and sautee another 2 min or until nearly cooked through. Season lightly with salt and pepper, add ginger and garlic and sautee 1 min.
  • Drizzle beef with sauce to taste (about 5 Tbsp) and stir-fry another 1 min or until beef is fully cooked through. Remove beef to a plate and cover to keep warm. Wipe pan clean with a paper towel.
  • Place clean pan over high heat and add 1 Tbsp oil. Once oil is hot, add mushrooms, season lightly with s & p and stir fry until golden (5 min). Transfer mushrooms to the plate with beef.
  • Add 1 Tbsp oil along with sliced onion and veggies and stir fry about 8 min or until soft and golden.
  • Combine vegetables with beef and mushrooms, drizzle in more sauce to taste (I used another 2 Tbsp) and stir fry just until hot. Serve over steamy white rice.

Tomato Spinach Sausage Pasta Recipe

4 Servings

INGREDIENTS:

  • 1 lb (450g) Italian sausage meat (mild or spicy)
  • 4 servings of pasta
  • 2 garlic cloves, peeled and roughly chopped
  • 7 oz (200g) cherry tomatoes, roughly chopped
  • 1 handful of fresh spinach
  • 2 tablespoons tomato puree
  • 1 teaspoon paprika
  • ½ teaspoon cayenne pepper
  • 1 tablespoon olive oil
  • 1/2 teaspoon chili flakes
  • 1/2 teaspoon of pepper

INSTRUCTIONS:

  • To make the tomato spinach sausage pasta: Start by cooking the pasta al dente, according to the package directions
  • 2. While the pasta is cooking, saute the sausage meat breaking up with a wooden spoon until almost cooked through. Add the garlic and a drizzle of olive oil to the sausage and cook until fragrant and the sausage meat is no longer pink.
  • 3. Add the chopped tomatoes to the sausage and garlic, with a sprinkling of paprika and cayenne pepper. Once those have cooked nicely stir in the tomato puree and add the spinach, letting it wilt.
  • 4. When the pasta is cooked, drain and stir it into the sausage, tomato, and spinach sauce. Serve the tomato spinach sausage pasta with lots of black pepper and chili flakes. Enjoy! ❤️

15-MINUTE CHICKEN STIR FRY NOODLES

4-5 Servings

INGREDIENTS:

  • 1 lb (450g) skinless, boneless chicken breasts cut into strips
  • 1 tablespoon olive oil
  • 3 garlic cloves, finely minced
  • 1 medium carrot, julienned or shredded
  • 8 ounces (225g)spaghetti noodles
  • 3 cups broccoli florets, rinsed
  • Fresh chopped scallion, for garnish
  • Toasted sesame seeds, for garnish

FOR THE SAUCE:

  • 1/2 teaspoon freshly grated ginger or ground ginger
  • 1 tablespoon brown sugar (or honey)
  • 1/4 cup (60ml) low-sodium soy sauce
  • 2 tablespoons hoisin sauce
  • 2 teaspoons sesame oil
  • 1/4 teaspoon crushed red pepper flakes, optional
  • Fresh cracked black pepper, to taste

INSTRUCTIONS:

  • 1. To make the chicken stir fry noodles recipe: In a large pot, with boiling salted water, cook the spaghetti according to package directions. Add the broccoli florets the last 5 minutes of cooking and let them cook with pasta until tender. Drain the noodles and broccoli and set aside.
  • 2. While pasta is cooking, whisk together the brown sugar, soy sauce, hoisin sauce, sesame oil, ginger, red pepper, and black pepper in a small bowl.
  • 3. Season chicken strips to taste with salt and pepper. Add olive oil to a medium-sized skillet and cook chicken in an even layer over medium heat, turning from time to time for 2 or 3 minutes, until slightly golden. Stir in the garlic, and carrots and cook for a minute more, until cooked through but not overdone.
  • 4. Transfer the cooked spaghetti and broccoli to the skillet and pour the sauce on top and toss until fully incorporated. Reheat for a couple of minutes and serve the chicken stir fry noodles, garnished with scallion and toasted sesame seeds. Enjoy!
