Passover Twix Bars
Delicious passover treat!

Passover desserts can sometimes feel tricky but this Twix bar recipe solves that problem instantly. It’s rich, gooey, and absolutely irresistible—guaranteed to have everyone at the table asking for seconds. A true crowd favorite, it’s perfect for Passover and so delicious you’ll want to make it all year round!
Ingredients
Shortbread Layer
-2 cups almond flour
-1/3 cup coconut oil melted or avocado oil
-3 tablespoons honey or maple syrup
Caramel Layer
-1/2 cup almond butter (creamy or crunchy)
-1/4 cup coconut oil or avocado oil
-1 teaspoon vanilla extract
-1/4 cup maple syrup
-Pinch of sea salt
Chocolate Layer
-1/2 cup chocolate chips
-1 tablespoon coconut oil
-1/4 teaspoon flaky sea salt

Instructions
Step 1: Prepare the Shortbread Layer
Preheat your oven to 350°F (175°C).
In a large bowl, combine the almond flour, melted coconut oil, and honey (or maple syrup). Mix well until the dough comes together smoothly and there are no dry spots remaining.
Line an 8×8-inch baking dish (or a loaf pan if you prefer thicker layers) with parchment paper. Transfer the mixture into the pan and press it down firmly and evenly to form the base. A silicone spatula works well for this—if it starts sticking, lightly grease it with a bit of oil.
Bake for 10–12 minutes, or until the edges begin to turn lightly golden. Remove from the oven and allow it to cool completely before adding the next layer.
Step 2: Make the Caramel Layer
In a small saucepan over medium-low heat, combine the almond butter, coconut oil, vanilla extract, maple syrup, and a pinch of sea salt.
Whisk continuously for about 2–3 minutes, until the mixture is fully melted, smooth, and well combined.
Remove from the heat and let the caramel cool completely. This step is important so it doesn’t melt the base layer when poured.
Step 3: Prepare the Chocolate Layer
Place the chocolate chips and coconut oil in a microwave-safe bowl.
Heat in 30-second intervals, stirring between each, until the chocolate is fully melted and smooth. Alternatively, you can melt it gently on the stovetop using a double boiler.
Step 4: Assemble the Twix Bars
Once both the shortbread base and caramel mixture have cooled:
- Pour the caramel over the shortbread layer and spread it evenly.
- Place the pan in the refrigerator for about 20–35 minutes, or until the caramel has firmed up.
- Remove from the fridge and pour the melted chocolate over the caramel layer, spreading evenly.
- Sprinkle flaky sea salt on top.
Return the pan to the refrigerator for another 5–10 minutes, until the chocolate is fully set.
Step 5: Slice and Store
Lift the bars out of the pan using the parchment paper. Slice into squares or bars.
For best texture and freshness, store in the freezer and take out a few minutes before serving.
